It's too expensive of an idea
Ever wonder why a lot of companies don't make science fiction franchises? They're expensive. Really expensive. The sets are complicated and hard to make, the special and practical effects are hard and expensive, plus the cost of production as a whole and the talent you need to sign. It all adds up.
The reason why Star Trek and other franchises have done as well as they have is the ability to reuse assets. Because they intend on being around for years, they can just build a handful of sets and re-use them for most of their shots, thus keeping costs down. In an anthology show in the 2020s, you'll either need new sets every episode or every season.
That all costs a lot to do. Coupled with the fact that most production companies and studios are feeling the financial pinch, there's no one who would invest that much money into an experimental Star Trek gimmick.
